Possum Hollow Chia Pudding - Vegan, Fructose low, Dairy Free and Gluten Free
- 2 cups of rice milk or almond milk
- 1/2 cup of Chia seeds
- 1/2 teaspoon of Vanilla Essence
- 1/4 cup of Maple Syrup
- 1/4 teaspoon of Cinnamon
There are two versions you can make of this the blended one or the whole chia one. This depends on preference of taste and texture. . For the bl;ended version put all the ingredients in a processor and blend for 1-2 minutes or until completely smooth. For the whole chia seed version blend all the ingredients except for the chia seeds and then whisk thru the chia at the end. Pour either version into a glass container and place in the refrigerator overnight. I like 8 hours for the chia seeds to swell properly. Also this way it is ready in the morning. A lot of people have these for breakfast but they are also a great desert or snack later in the day.
I put it on the top of my breakfast, or in smoothies, or on fruit salad- great fibre!!!
