1. I placed the frozen berries in a saucepan with water stirred over a low heat until they turned into a chunky puree.
2. As the berries melt and become softer I added the chia seed and the maple syrup and the vanilla. Instead of the vanilla I sometimes add a very finely chopped kaffir lime leaf.
3. Keep stirring to make sure the chia is spread well. Then take off the heat and leave for 10 minutes to cool -stirring occasionally.
4. Pour into sterilised jar and refrigerate until cooled then it is ready to eat. Great on buckwheat bread or with the nut crackers.
