Vegetable Stock - GF, Vegan, DF
This is amazing. I make this out of all the off cuts and left overs. Ideas I use:
- 200g Celery ( veggie juice left overs)
- 2 Carrots ( Veggie Juice left overs)
- 2 cloves of Garlic
- Rind of one Pumpkin
- 1 Tomato
- 1 Zucchini
- 1 Bay Leaf
- Rosemary
- Few Leaves of Basil
- Parsley
- 150g Himylian Salt
- 1 Tablespoon Of Cold Pressed Olive Oil
Place all the Vegetables and herbs in the thermomix and chop up for 10 seconds on speed 6. Add salt and oil and cook for 20 minutes on Varoma heat on speed one. Then once finished I do a final mix by slowly lifting the speed to 9. Then I store in refrigerator or freezer. Use Tablespoon quantities instead of commercial stock cubes for casseroles and soups and marinating meats.
