Vegan Nut Roast
Ingredients:
- 2 cups of nuts - almond, brazil, walnut, pecan
- 3/4 cup pepita seeds
- 1 zucchini
- 5 spring onions
- 3 carrots
- 2 tblspns olive oil
- 2 garlic
- 1/4 tomato passata
- 2 tblspns gluten free soya sauce
- 3/4 cup of gluten free bread crumbs
- 2 tablespoons of flaxseed meal
- 1/4 cup of thyme, parsley and rosemary
- Dry roasted pumpkin and a few walnuts for the top and garnish with basil leaves

Directions:
1. Simply blend all the ingredients and let sit covered for 1 hour. Then I used green baking paper to line the tin. As it was Christmas I used a ring to make it pretty on the table/ cook 200 degree Celsius for 45 minutes and served with a vegan gravy and homemade plum and cherry sauce. 30 minutes into the cooking I slightly pushed and placed pieces of the roasted pumpkin and walnuts into the top for the last 15 minutes of the bake and then before serving placed the basil leaves on top.
