Turnip and Herb Hash Browns
Ingredients:
- 2 cups of peeled and grated turnips
- 2 spring onions- greens - this is a lower fructose but still onion flavour
- 1 medium sized egg
- 1 tablespoon of fresh thyme ( other herbs can be used like basil or oregano or coriander or parsley)
- Sea salt
- Black pepper
- 2 tablespoons of olive oil
Directions:
1. Peel and grate turnips. I did this with a julienne.
2. Place grated turnip with herbs and onion. Mix well and then add egg. Season with salt and pepper
3. Heat Oil in frying pan on a medium heat.
4. Spoon a large tablespoon of the turnip mix into the frying pan and press into a circular type shape.
5. Cook gently until brown on one side. Flip and press down to cook the opposite side.
6. Serve and enjoy
