Sweet potato, salmon and dill pancakes
Ingredients:
- 300g sweet potato grated
- 2 eggs
- 3 spring onions - greens ideally
- 4 tablespoons of fresh dill
- rind of one lemon
- 100g of rice flour
- olive oil to cook
- Love
- optional serve with smoked salmon/ avocado
- dressing - lebanese cucumber, 3/4 cup of goats yoghurt, 2 tablespoons of fresh dill, 1 teaspoon lemon juice
Direction:
1. Blend or whisk eggs, rice flour, spring onion, dill and rind of lemon up.
2. Stir through the sweet potato
3. Mix up and fry in a oil. Using only as much oil as needed
4. Whisk up ingredients for dressing.
5. Layer it on plate with a garnish of dill on top.
