Sweet Potato and Leek Soup - GF, DF, VEGAN optional
Ingredients
- 5 sweet potatoes
- 3 cloves of garlic
- one leek
- two dessertspoons of coconut oil
- one dessertspoon of olive oil
- 1/4 cup of parsley
- two cups of rice milk
- 8 cups of water
- 2 teaspoons of himalayan salt
- optional - smoked salmon 500mg
Directions
Saute garlic and leek in one dessertspoon of coconut oil and one desertspoon of olive oil. Chop up the sweet potato and add these with water, rice milk, chopped parsley and salt and bring to the boil. Lower temperature to a simmer and then if you choose to add the smoked salmon you can. I then blended it up to serve. Easy and so yummy. Served with gluten free toast or buckwheat cruskits.
