Salmon Salad - GF, DF option, Paleo
Ingredients
- Salmon fillet
- Lemon juice
- Green beans
- Spinach leaves
- Halloumi cheese sliced and grilled in a bit of olive oil
- Avocado
- Basil leaves
Directions
The salmon is fried in a tiny bit of olive oil 10 minutes on each side. As it is cooking I squeeze a little lemon juice on each side. A little black pepper is nice too. In a small fry pan I cook the cut up Halloumi cheese.
The rest is a salad where I combine the chopped up green beans, sliced avocado, basil leaves and spinach leaves. Once the Halloumi is cooked I tip the Halloumi onto the salad. If you want it to be dairy free leave the Halloumi out. Simple
Serve the cooked salmon with the salad.
