Salmon, asparagus rice paper rolls
Ingredients
- 6-12 rice paper sheets
- one bunch of fresh organic asparagus
- 1 Tablespoon of organic olive oil
- one teaspoon of lemon juice
- black pepper
- fresh raw salmon ideally not smoked
- Basil leaves
Directions
Wash and cook the asparagus in a little organic olive oil. As it is cooking use some black pepper and maybe some lemon juice. Once it is cooked cut into three. Let the asparagus cool completely before preparing the rolls. Soak or wet down the rice paper one at a time.. Once each rice paper roll is soaked lay some asparagus, some salmon and one leaf of basil and then rollout up. Keep moist and cool if not serving immediately.
