Quinoa, Salmon and Salad
This is a simple dinner that works for detox, protein and health. You can modify it relieve to your eating plans.
The amounts I use are approximately and you certainly can throw in more things.
Ingredients:
- Quinoa cooked up like rice - you can serve hot or cold
- Red salmon - I used 210gms of tinned Atlantic salmon
- one cup of baked pumpkin cut up into pieces
- Nuts/seeds - I used roasted pine nuts, pepitas and other times I use walnut
- Continential cucumber- 1/4 chopped into small cubes
- Roasted capsicum - you could also roast a chilli
- Cherry tomatoes - chopped into quarters
- Green sprout - chopped in half
- Spinach leaves or basil - I used 1/2 cup
- Parsley chopped or you could use coriander - I used 1/4cup
- Half a lime juiced on top if you need
- Love
Directions:
Mix this all in a bowl and serve. So yummy. I did not use dressing of oil or vinegar. This is on purpose as a really clean meal with so much nutrition.
