Quinoa Salad
Ingredients

1.5 cups of quinoa

1/4 jap pumpkin

1 fresh tomato
-
1/2 cup of spinach leaves

1 bunch of broccolini

3 tablespoons of Meredith valley goats cheese

black pepper on top
There are so many things you can include in a quinoa salad - pomegranate, cucumber, rocket, spring onion, basil, herbs.
Directions
1.Firstly boil the quinoa in water just like you cooking rice and then strain and set aside.
2. Slice the pumpkin thinly and dry roast it in the oven on green baking paper. Once cooked slice up
3.Cut and place broccolini bowl and pour boiling water on top of it and leave for 3- 5 minutes to simply blanch them. Once blanched cut into small 3 cm size pieces.
4. Cut tomato into small cubes
5. Put all the above in a big bowl and add the goats cheese and the spinach leaves and the black pepper and serve.
