Purple Veggies and Blackberries
Ingredients
- 2 eggplants
- 1 red onion
- 1/4 red cabbage
- 3 Tablespoons of rosemary cut
- Option - 2 garlic cloves
- 1 cup of organic blackberries room temperatur
- Olive oil
- Salt and pepper to flavour as needed

Directions
Heat the saucepan with olive oil. Add sliced up onion and garlic if you choose. Sauté and then add the eggplant and cabbage and rosemary. Stir over medium heat til cooked thru. Sprinkle with salt and pepper whilst cooking. Add the blackberries at the end and serve with sprig of rosemary.
