Pomegranate Christmas Goats Cheese Ball
Ingredients:
- 1/2 a pomegranate arils removed and set aside
- 2 packets of Meredith Valley Goats Cheese or Lactose Free Philadelphia Cream Cheese
- 1 garlic clove- optional
- Greens of 2 spring onions
- 1 tablespoon of chives
- Pinch of black pepper or nigella seed - optional
- 2 teaspoons of fresh rosemary plus more for garnish

Directions
Remove the Pomegranate Avrils and set aside. Place garlic clove, rosemary, spring onion, pepper, chives in a blend and cut til fine. then I put the chosen cheese in the blender and blend quickly and shape the the cheese and herb ball into a round shape on plate to be served. It is easier to make it ball shape with the lactose free cream cheese. Then I cover the ball with the set aside pomegrante avrils. Garnish with a swig of rosemary.
