Osso Bucco - DF, GF, Fructose Low
Ingredients
- 4 pieces of osso bucco meat (grass fed)
- 1/3 cup buckwheat flour
- 2 tablespoons of macadamia oil
- 2 carrots
- 2 sweet potatoes
- 2 zucchini
- 1 cup of spinach leaves
- 1 brocolli
- 1 jar of IGA tomato and herb mix.
- Boiled rice to serve

Directions:
Coat the osso bucco with the buckwheat flour and then lightly brown it in big saucepan on each side. While this is happening cut all the vegies into smallish pieces. Put cut vegetables on top of the osso bucco and pour a jar full of the IGA tomato mix on top and then fill the jar with filtered water adding this on top. Bring the saucepan and contents to the boil. Once it has come to the boil mix things around and then lower it to a simmer and cook it on simmer for hours. This helps the dish become tender and full of flavour. I serve osso bucco with rice. This was one of my favorite dishes when I was growing up in winter. Without the rice it is paleo and very nutritious too.
