Non Dried Fruit Gluten Free Christmas Pudding - GF, DF
Ingredients:
- 3 eggs
- 160g brown sugar
- 90g olive spread or coconut oil
- 220g gluten-free self-raising flour
- 40g of almond flour
- 2 teaspoons cinnamon
- 1 teaspoon ginger powder
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon gluten-free baking powder
- 3 tablespoons of black treacle
- 260mls almond milk
- 200g of cherries pitted
- 50 g of organic blueberries

Directions:
1. Grease pudding bowl. I used one in the round for Christmas decorations.
2. Preheat oven to 180 degrees Celius.
3. Put all ingredients except fruit and milk in a bowl and whisk together well.
4. Pour milk in slowly as you keep whisking.
5. Por into pudding bowl. Then evenly put the fruit in the pudding.
6. Place in the warm oven for 45-50 minutes. Remove from oven and let cool before tipping out. Or serve from this bowl. I usually serve with maple syrup and a special treat is the dairy-free ginger cookie ice cream. Don't forget the love
