Macadamia/ Pepita Lemon Balls - Fructose low, Vegan, Gluten free, Dairy free
Ingredients
- 1 cup Raw Macadamia and Pepitas
- 1 cup Desiccated Coconut
- Rind of One Lemon
- Juice of Half a lemon
- 1/2 teaspoon of Natural Vanilla Essence
- 1 tablespoon of Maple Syrup
- Extra Coconut to roll balls in
- LOVE
Directions
Place ingredients in processor and blend until the mixture appears like a sticky mix. Shape balls with your hands to the desired size. Then roll in the extra coconut and place in the fridge til they set.
These are a great snack ball without the fructose sugar in dates.
