Lu Lu's Cauliflower Parmigiana
Ingredients
- one egg
- one large cauliflower cut in 4 large steaks.
- 2 tablespoons of milk ( i use rice milk)
- pinch of pepper and pinch of himylian salt
- 3/4 cup of buckwheat/corn crumbs ( ground up corn flakes and buckwheat kernel)
- 1 tablespoon of extra virgin olive oil
- 4 fresh tomatoes finely chopped
- 2 garlic cloves
- 2/3 cup of grated Nimbin cheese
- fresh basil to serve.
Directions
1. Preheat oven to 220degrees Celcius
2. Place egg and milk in shallow dish. Whisk to combine
3. Coat the cauliflower with egg mix and then the breadcrumbs
4. Bake for 15 minutes in oven
5. Whilst cooking place oil in frypan with tomato and garlic. Cook and stir occasionally over medium heat. Season with pepper and salt
6. Top the cauliflower with tomato and cheese and place bake in the oven for 10 minutes.
7. Serve with basil. Enjoy
