Pesto Using Goats Cheese
Ingredients:
- 110g of Del Praka or Caprakaas hard goat's cheese
- 60g pinenuts
- 1 garlic clove - optional
- 2-3 bunches of fresh basil - remove the leaves
- 200g olive oil
- 1/2 teaspoon of rock salt
- Love
Directions
1. Firstly grate cheese finely - or thermomix 15 seconds on speed 10.
2. Add pinenuts, garlic, basil, olive oil, salt, love and chop in blender or in thermomix 20 seconds speed 7.
3. Serve immediately or transfer into jar and store in the refrigerator until ready to use.
4. Can be used in pasta or on fish or chicken or I use in wraps for lunch.
