Cucumber Nigella Rolls
Ingredients:
- Continental cucumber
- Raw Salmon - sashimi grade
- Avocado
- Chives ( optional)
- Goats Feta or tahini as vegan option
- Nigella seeds and/or sesame seeds
- Love
Directions
1. With a wide peeler I peel the cucumber long ways to get the long thin strands of cucumber.
2. Lay the strands close together flat on some paper toweling and then press more paper toweling on the top to help dry it slightly.
3. Spread goats feta across the top half and sprinkle some cut chives on it
4. Then lay some avocado on top and some slices of fish. You can use smoked salmon but healthier to use sashimi grade salmon
5. Roll up the cucumber around the fish and avocado like a sushi roll, using the cucumber as the outer layer.
6. Cut the roll into little mouth size pieces and sprinkle with a touch of nigella and sesame seed.
7. Can be eaten alone or try with tahini or gluten free soya sauce.
