Chilli, Lime Corn
Ingredients:
- 1/2 tspn of dried chilli flakes or fresh red chilli
- 6 leaves of coriander
- 2 limes - peel and cut out white pith
- 30g of olive oil
- 1 tspn of rock salt
- 1/2 tspn black pepper
- 4 corn cobs
- 500g of water

Directions:
In blender blend up prepared lime. Add the coriander, chilli blend together for 5 seconds. Add the oil or lactose free butter, pepper and salt and blend 5 seconds. Transfer to bowl. Peel the outer layers of husks off the corn retaining at least 3 layers. Peel these three layers gently back and spread chilli mix over the yellow cobs and then wrap the layers over the cobs. You can cook on the barbecue or use the water in the bottom of a steamer and steam for 25minutes before serving. Very yummy.
