Cabbage and Buckwheat Noodles
Ingredients:
- Soba gluten free buckwheat noodles
- 1/4 red cabbage cut finely
- 1 carrot- julienne grated
- Green cucumber sliced and each slice cut in quarter
- Coriander - 15 leaves
- Dressing - lime juice
- Sprinkled in sesame seeds
- Optional to add a red chilli deseeded and or greens of spring onion
- Optional 125g peanut butter( can use almond butter as alternative), add 40ml gluten free tamari, 40ml olive oil, 40ml rice wine vinegar and 1/4 chilli deseeded and 5cm piece of ginger. Blend up
- Optional add a tin of alaskan red salmon to it for more protein

Directions
1. Cook the noodles and drain well
2. All other ingredients mix in serving bowl. Add the Noodles
3. Divide into serving bowls, garnish with a few coriander leaves, put a dollop of peanut sauce on top. Sprinkle with sesame seeds.
