Buckwheat Porridge
Ingredients:
1 1/2 cup buckwheat groat, soaked overnight and rinsed well
1 cup of pumpkin soup (plain organic pumpkin steamed in water and blended)
Two pinches of nutmeg
½ - 1 tsp cinnamon.
1/2 vanilla bean or 1/2 teaspoon organic vanilla essence

Directions:
- Place ingredients in a small saucepan. Cover with 2/3 cup (filtered) rice milk or almond milk
- Cover and bring to the boil, then reduce to a low simmer for 12 minutes. Turn off heat then let sit for 5 minutes.
- Serve in a bowl and add your choice of milk (rice, almond, coconut etc.) and top with chopped walnuts. If preferred add banana and /or a small amount of maple syrup as a treat
