Brussel Sprout Pancakes
Ingredients:
- 1 cup of gluten free self raising flour
- 1 teaspoon of salt
- 200mls of filtered water
- 2 eggs
- 10 brussel sprouts
- 3 spring onions
- olive oil for cooking

Directions:
1. Add dry ingredients to a bowl and give it a quick whisk
2. Mix the water and egg together.
3. Pour the egg mixture into the dry mixture and stir to combine
4. Finely cut brussel sprouts and spring onions ( add one garlic too if you would like)
5. Add Brussel Sprout mix to the liquid and stir through.
6. Heat some oil in the fry pan and the cook the pancakes 7 minutes on each side. I serve with goats cheese, avocado and or home made hoisin sauce. Sometimes I serve with salmon slices.
