Broccolini and Blackberry Salad
Ingredients:
- Bundle of Broccollini
- One Punnet of blackberries washed and rinsed
- 1 tbspn olive oil
- 3 tblspns slithered almonds
- 1 tspn Dukkah ( non pistachio)
- 6 cherry tomatoes
- 2 cups of spinach leaves
- 20ish coriander leaves
- 10 basil leaves
- 1 tbspn of finely cut chives
- 1/4 jap pumpkin sliced and dry roasted on brown baking paper
- 2 spring onion greens cut finely
- Lime juice of one lime
- Love
Directions:
1. Dry roast the sliced Jap pumpkin - leave to cool
2. Place Broccolini in heat proof bowl - boil water in kettle and pour over the broccolini and leave for 3-4 minutes. Then rinse in cool water and place in fridge.
3. In Small fry pan heat oil and roast the slithered almonds and set aside.
4. In a salad bowl place spinach leaves , coriander leaves, basil leaves, chives, and spring onion. Top with sliced cherry tomatoes, pumpkin cut in to 5cm size pieces and broccolini. Lastly on top place the blackberries and sprinkle with slithered almonds and dukkah. Squeeze lime juice on top before serving. Enjoy
The great thing with a salad like this you can easily leave things out if they are not to your liking. I use lime juice instead of oily dressing. Such a lovely salad.
