- One cup of Super Grain Mix (white, red, black quinoa and amaranth)
- 250 g of buckwheat pasta
- Tin of salmon in water
- 1/2 a cucumber
- 8 green beans
- 1/2 cup of spinach leaves
- 1/2 cup of cherry tomatoes
Place Buckwheat pasta into 4 litres of boiling water. Stir regularly for 8 minutes then strain. Put Super Grain Mix in 500mls of boiling water for 12 minutes stirring regularly. Strain and mix with buckwheat pasta.
In a bowl place cut up tomatoes, green beans, cucumber, salmon and spinach leaves. Pour the pasta and seed mix on top and toss together.
Optional ideas for serving are: smoked salmon, goats cheese, chilli, chilli sauce, cranberries, roasted sweet potato or pumpkin.
